Rejuvelac Part II

Here are the wheat berry sprouts I placed in the fridge.  They smelled quite fresh when I opened the container.  Very Clean…

The plan was to make RAW BAGELS…so that didn’t happen! :(  I placed the wheat berries into the Food Processor.  All of the recipes I found said to add olive oil and a pinch of salt.  Process the wheat until it makes a dough type of ball…

A pinch of Salt… (If you have been here a while, then you know I have a small store.  One of the most rewarding experiences has been the people I have met through the years.  I am quickly coming up on my 10 year anniversary of owning this store and luckily I still have many of the same customers. :)  One of them, always has really cool adventures, vibrations, and overall beauty about them.  He is a father, a musician and a great friend to me and my “taste tester”!

One of the things I respect about him is his regard for his son, the earth and his culture.  From time to time he reads my blog and he brought me this wonderful salt.  The salt was brought from a salt mine in the mountains of Mexico.  It is said the only way to get this salt is ONLY IF SOMEONE GIVES YOU SOME!  They don’t sell ANY of the salt from their mine and it only is used in that small town! Thank you L!)

Okay, so back to the wheat berry adventure…

I put the wheat berries in the Food Processor and it looked like oatmeal! :(  NOT DOUGH!  So I added Raisins, Cinnamon, and a bit of agave.

Here is the mix! Don’t you think it looks like oatmeal?

I mixed in a bit more Cinnamon and then put them on a Teflex sheet. The Dehydrator was set at 115 and they are going to be in there for 12 hrs. The beauty of the Rejuvelac is how the food product keeps going on and on! :)

Christmas Eve Run in SUNNY Southern California!

This is the beautiful San Gabriel Mountains while I was running!  At this point I had been running for about 15 minutes!

I took this picture on my way back.  It was the 2 mile mark!  The sun felt GREAT!  At first I thought I was going to be cold in what I had on.  Long Sleeve Fleece Jacket, T Shirt and pants.  Just then I saw two kids running around in shorts and tank tops!  Whew!

And about 5 minutes until I was back home I saw this miraculous creature! :)  He was jamming on some carob that had fallen into the street!

I got back home and noticed I had finished my run in 37 minutes! :) YES! Best time yet! Thanks to E3 LIVE and Rejuvelac!

I am officially 1/2 way through my cleanse!  Yeah!   :)

As noted I haven’t been enjoying my smoothies.  However, I am going to try the opposite side of the spectrum.  I am going to make some smoothies with vegetable juices and nut milk now.  Maybe the problem had been me trying to add fruit to sweeten. I suppose that will be next weeks task.

Today, I brought lots of fruit.  I have been really good at using what I buy until it is all gone.  I am very happy about that.  If I’m cooking with heat, I usually have left overs.  And then the left overs go bad. On goes the cycle of waste.  BUT with the RAW food diet, I know the exact amount I am going to need.  I haven’t thrown anything away and thus far, I haven’t wasted anything.  Great for the planet! Great for the home! Great all around!

Last night I decided to try my hand at a sort of casserole, use the buckwheat I had sprouted and use some of the nuts I have had soaking.

BUCKWHEAT CEREAL

The recipe for the cereal is in the Matthew Kenny & Sarma book called RAW FOOD REAL WORLD.  I made both the coco cereal and the cinnamon cereal.

Zucchini Pasta Casserole

I had made pesto earlier in the week and wanted to do something with it.  I figured I would attempt to be creative with the zucchini pasta again since it was so good.  I also had some cashews soaking and spinach in the fridge.


Spinach Cashew Pesto

1/2 cup premade pesto (Recipe here)

1 1/2 cup spinach

1 cup cashews, soaked

Juice of 1 lemon

1/4 cup olive oil

1 clove garlic

1/4 cup water

Preparation: Place cashews in the food processor.  Process until creamy.  Add all other ingredients except water.  Process a few times until you see a bright green color.   If it is too thick add the water a little at a time.

Marinated Mushrooms

15 Cremini Mushrooms

1/2 cup Apple Cider Vinegar

1/4 cup olive oil

Juice of 1 Lemon

3 Garlic cloves

2 T. Oregano (Fresh)

Preparation: Place all liquid ingredients in a good sized bowl.  Slice mushrooms and add to bowl.  Mix up and allow to marinate for 1 hr or more.

To put casserole together:

1. Place zucchini on a teleflex sheet.  (I spiralized 3 Good sized zucchinis)

2. Form a flat mount on sheet.  Roughly 8 x 10 sized square.

3. Scoop the Spinach Cashew Pesto onto the zucchini noodles.  Spread the pesto all around the top.

4. Add marinated mushrooms.

5. Place in the Dehydrator at 115 degrees for 1 hr to 1 1/2 hours.  Just until warm.

So that was my culinary adventure for the evening.  The cereal should be ready by the time I get home.  I also have a sundried tomato crust in the Dehydrator.  I will update those pictures tomorrow!

I haven’t posted a smoothie pic in a minute, so I thought I would show a picture of my smoothie today.  This smoothie was

Day 9 Smoothie

1 Green Granny Smith Apple

2 Bananas

2 Handfuls of Cranberries

1 Romaine Heart

Preparation: Place fruit in blender.  Liquify. Add water to desired consistency.

*NOTE: The smoothie would be really good if you add a date or two, however I can’t since I am eating anti parasitic and I can’t have dates.
The really cool thing I have been able to utilize and really be better about is my use of plastic packaging.  I go and buy most of the nuts, seeds, and grain in bulk so there is no packaging – which is positive.  And then I also am able to stay away from plastic when I take my smoothies back and forth from my store.  I have been using Mason Jars to take actually everything.  Even in storage.  I just think it’s better this way.  Plastic is cheap but did we really need to start with the plastic container? Before I digress…

So…as I was saying.  In keeping with the glass theme I was able to implent glass when it comes to straws as well! ;)   If any of you are interesed, leave a comment and I can send you one.  They are $5 bucks suggested dontation.

This was a nice surprise!  I found the following recipe on gone raw. (Where else, right?)  and as usual I changed the recipe up a bit.  It worked well, as it was quite savory.  I have posted the original recipe and given credit where credit is due! :)

Falafel Wrap!

Ingredients:

For the tortilla
3c peeled courgette (zucchini)
3T olive oil
2t lemon juice
Pinch cayenne
1t ground coriander
1/2t salt
1/2c flax meal*

• Blend all ingredients in a high-speed blender until smooth.
• Add flax meal and blend again until smooth.
• Pour mixture onto 2 dehydrator sheets and spread evenly into a circle on each.
• Dehydrate for 8 hours at 105 degrees F, or until able to peel of the sheet.
• Once the dehydrator sheets are removed, return to the dehydrator for 30 – 60 mins, until both sides are dry to the touch but still pliable.
* Flax meal is flax seed that have been ground in a coffee grinder or similar, to produce a fine flour.

For the falafel
1c pumpkin seeds
2T fresh dill, finely chopped
1t ground coriander
2t cumin
8 sun-dried tomato halves, soaked for 1 to 2 hours and then chopped
3T fresh coriander (cilantro)
1 clove garlic
2 shallots
1/4c olives, stones removed
2t oregano
Pinch cayenne
Pinch pepper
1/2t salt
1T lemon juice

• Process all ingredients in a food processor until thoroughly mixed.
• Form into Falafel and dehydrate on a Paraflexx sheet at 105 degrees F for 6 – 8 hours.

I began the evening before preparing the batter for my wrap.  Somehow it didn’t end up looking like the one in the picture.  But, that’s okay nothing EVER does.  Needless to say I was completly successful in making a wrap.  It reminded me of the day I was attempting to make crepes filled with collard green that were lightly simmered in a curry coconut reduction.  That was a good dish.  I have seen on various You Tube videos and seen that there are some rather translucent wraps made with coconut meat.  I think I will try to recreate the collard green “mouth amusement” in the raw.  (Stay Tuned.)

So here is my version of the Wrap/Tortilla

It was nice and pliable this time.  Unlike my other adventure that went from tortilla to tortilla chip!  You can see that posting here.

The flax seeds are pretty prevalent visually.  I need to grind them up better.  I keep thinking it is more nutritious to grind them up at that moment rather than purchasing pre ground flax.  Maybe I am crazy! Maybe not!

This was a tasty dish if I do say so myself! ;)   I used the rest of the hummus I made the other night.  I was able to make 4 Wraps and I have 5 Falafel left over.  No doubt that may be dinner tomorrow!

Update: Physically I feel good.  Giggly today for some reason.  I have howver lost my voice.  Maybe that is the universe telling me to be silent and know that I am doing the right thing.  No pain or anything like that.  Just no voice.

This morning I did my own yoga mala to begin this cleanse in a spiritual and fundamentally healing way!  The heat this series of poses brings to the body is amazing.  It had been a few days since I had practiced, but I must say it left me quite positive!  I have had a smile on my face since! ;)

Smoothies made with fresh fruit and greens will be a prevalent part of my routine throughout the day.  I have one other person partaking in the cleanse.  I couldn’t get anyone else to do the cleanse since New Year’s Eve is just around the corner.  All the partying you know!

Note:

These are the recipes I will begin the cleanse with.  I will also be making my own capsules of Wormwood and Clove.  Each set of pills will be made in 3 – 5 day intervals.  I will also make a list of “ailments” as well as a diary of what I feel from beginning to end.

Thai Soup

Sergei Boutenko
2 cucumbers
1 large avocado
1 lime, juiced
3 cloves garlic
6 leaves curly kale, stems removed
½ teaspoon dried turmeric powder
½ inch fresh gingerroot
2 cups water
Yields 2 quarts

Coco-Tango

Thai coconut, meat and water
5 leaves kale, stems removed
2 nectarines
2 peaches
1 mango
Yields 2 quarts

Party in Your Mouth Green Smoothie

1 small pineapple, cored
1 large mango, peeled
½ head romaine lettuce
½ inch fresh ginger root
Yields 2 quarts

Morning Zing Smoothie

Unfortunatley there were no peaches at the HFS (Health Food Store) So I will have to go to the market in the a.m.)

2 stalks celery
½ inch fresh gingerroot
2 peaches
½ pineapple
Yields 2 quarts

Parsley Passion Smoothie

1 bunch fresh parsley
1 cucumber, peeled
1 Fuji apple
1 ripe banana
1–2 cups water
Yields 2 quarts

This cleanse will also allow me to prepare to make yogurt from Thai coconuts! Exciting!  I will then use this yogurt in my smoothies to add the good bacteria I will need as well.  I will also be able to kick on the dehydrator!  Here I come my beautiful 9 tray Excalibur!  Raw Pizza and more smoothies to come tomorrow.
